I've spent the last 15 or so years perfecting my own chilli con carne recipe. I've fine tuned the ratio of meat/tomatoes/chillis/stock/kidney beans/cumin seeds/sour cream until I've been happy with the flavour.

There's nothing better after a night on the beer.

I thought I was the chilli king. Nobody could tell me a thing about chillis that I didn't know.

Until Saturday.

On Saturday my wife bought home a bar of chilli chocolate. Chilli fucking chocolate. Apparently you can get chilli ice cream as well.

There's a whole world of chilli out there just waiting for me

got a great chili recipe from texas. it has jalapenos, chipotles and serranos in it for the heat. the authentic "texas red" does not contain tomatoes at all, and onions are added raw only after cooking.

Try adding a little dark chocolate to your chilli, it rounds off the flavour and adds a richness and gloss to the sauce.
