Is your boss a Jew? Is it legal in Israel for an employer to condition continued employment or advancement on working on the Sabbath?
If it is legal, then report your boss to the Lubavitchers, the other Hasids and the Orthodox. I suspect a few phone calls threatening exposure will straighten out your boss real quick.

beside, in the cases that have won, it was always a devout religious man. since I can't claim I am devout, I will win only by making this in publicised case, making bad publicity for my company.
I started working there to get experiance in a known company. I got that, and if I'll sue, I will loose it.
so going legal will give me nothing good.
it is against company policy, but he won't be fired over this, and I'll still have to work with him.
moving to another position will probably mean a demotion, since now I have a good position, and in any other position I'll have to build my way up again.
staying with him hating me will mean I won't get any bonus, and be very unpleasent.
so just complaining, will also bring me nothing good.
if I'll quit, on the other hand, I'll still have good references in my CV,
I'll probably get dismissal fees,
and he will have his yearly bonus reduced.
